Tomato and Courgette Soup with Spinach
This tomato soup is a great start to a meal, packed with vitamins and minerals, there's very little protein or carbohydrates so you will be ready for your main right after.
Ingredients
- Courgettes (300g)
- Broccoli stumps (200g)
- Fresh tomatoes (500g)
- Fresh spinach (200g)
- Garlic cloves (x2)
- Fresh basil (small bunch)
Directions
- Add a splash of water to the pan
- Chop the courgettes and broccoli stumps, then simmer with lid for 8 minutes
- Add the tomatos and garlic cloves, then simmer with lid for a further 12 minutes
- Turn off the heat, then blitz in the spinach and the basil
- Serve
