Squash and Sweet Potato Soup with Cumin

A warming starter with squash and sweet potato, or lunch when accompanied with bread.

  • Onions (1 medium)
  • Carrots (1 large)
  • Butternut Squash (1Kg)
  • Sweet Potato (1 large)
  • Green Pepper (1 medium) (optional)
  • Red Pepper (1 medium)
  • Garlic (2 cloves)
  • Cumin (fresh or dried)
  • Chilis (optional)
  • Fresh coriander (optional)
  • Cooked chicken or turkey (optional)


  • Fry the onions and carrot in a pan until they are caramelised
  • Add 100ml of water to the pan with the chopped squash, sweet potatoes, garlic, and cumin, and simmer with lit for about 25 minutes.
  • Turn off the heat, then blitz in the geen and red peppers
  • Optionally add the cooked chicken or turkey
  • Serve
  • Garnish with fresh coriander
