Squash and Sweet Potato Soup with Cumin
A warming starter with squash and sweet potato, or lunch when accompanied with bread.

Ingredients
- Onions (1 medium)
- Carrots (1 large)
- Butternut Squash (1Kg)
- Sweet Potato (1 large)
- Green Pepper (1 medium) (optional)
- Red Pepper (1 medium)
- Garlic (2 cloves)
- Cumin (fresh or dried)
- Chilis (optional)
- Fresh coriander (optional)
- Cooked chicken or turkey (optional)
Directions
- Fry the onions and carrot in a pan until they are caramelised
- Add 100ml of water to the pan with the chopped squash, sweet potatoes, garlic, and cumin, and simmer with lit for about 25 minutes.
- Turn off the heat, then blitz in the geen and red peppers
- Optionally add the cooked chicken or turkey
- Serve
- Garnish with fresh coriander
